Blueberry Loaf Cake

Instructions:

Step 1: Prepare the Ingredients

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together the 2 cups all-purpose flour1 1/2 teaspoons baking powder, and 1/2 teaspoon salt. Set aside.
  3. In a small bowl, toss the 1 cup fresh blueberries with 1 tablespoon of flour. This will help prevent them from sinking to the bottom of the loaf during baking.

Step 2: Cream the Butter and Sugar

  1. In a large bowl, use a hand mixer or stand mixer to cream together 1/2 cup softened butter and 1 cup granulated sugar until the mixture becomes light and fluffy, about 3-4 minutes.
  2. Add 2 large eggs, one at a time, beating well after each addition. Then, add 1 teaspoon vanilla extract and continue mixing until combined.

Step 3: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients (flour mixture) to the wet ingredients (butter and egg mixture), alternating with the 1/2 cup sour cream. Begin and end with the dry ingredients.
  2. Mix until just combined—don’t overmix!

Step 4: Fold in the Blueberries

  1. Gently fold the flour-coated blueberries into the batter using a spatula. Be careful not to overwork the batter to keep the cake light and fluffy.

Step 5: Bake the Cake

  1. Pour the batter into your prepared loaf pan and spread it evenly.
  2. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs attached.
  3. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 6: Make the Glaze

  1. While the cake is cooling, make the glaze by whisking together 1/2 cup powdered sugar1-2 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. If the glaze is too thick, add a bit more milk; if it’s too thin, add more powdered sugar.
  2. Drizzle the glaze over the cooled cake.

Serve and Enjoy!

Slice and enjoy this deliciously moist Blueberry Loaf Cake with a cup of tea or coffee. The sweet glaze perfectly complements the tartness of the blueberries, making every bite irresistible. It’s the perfect addition to any breakfast, brunch, or dessert table!

Tips for the Perfect Blueberry Loaf Cake:

  1. Don’t Overmix the Batter: Overmixing can cause the cake to be dense. Mix just until the ingredients are combined.
  2. Use Fresh or Properly Thawed Blueberries: Fresh blueberries work best, but if you’re using frozen, make sure to thaw and drain them properly.
  3. Add Lemon Zest: For a citrusy twist, you can add some lemon zest to the batter to complement the blueberries.
  4. Glaze Option: If you prefer a less sweet option, you can skip the glaze and serve the cake plain or with a dusting of powdered sugar.

Enjoy baking this Blueberry Loaf Cake—it’s sure to become a favorite!
